Summers can be draining, especially for children. The summer heat often impacts one’s energy and appetite as well. It is important to include nutritious food in their diet. 

  • Having smoothies is a healthy way to consume protein and also acts as a diversion from the monotony of everyday meals. You can include a variety of fruits, vegetables, and nuts to make it delicious yet enriching.
  • Consume more green leafy vegetables during summer as they are a powerhouse of potassium and iron.
  • Have plenty of fruits that help you stay hydrated. Tomatoes, watermelons rich in vitamin A, apples, oranges, mangoes, blueberries and pineapples are loaded with antioxidants. 

3 Fun summer recipes to try with your kids

There are so many fun and easy summer recipes you and your child can experiment with. Take a look at 3 such exciting recipes:

1. Instant Peanut Butter Banana Ice Cream

Ingredients:

  • 3 peeled, frozen, overripe bananas (because they taste sweeter)
  • 3/4 cup natural, creamy peanut butter
  • 5 tablespoons nonfat milk
  • Toppings: mini chocolate chips, shredded coconut, sliced fresh bananas

Method:

Break bananas in half and place them in a blender, along with the peanut butter and milk. Blend until creamy and smooth. Garnish it with chocolate chips, coconut, and banana slices, and serve immediately.

  • Stay hydrated by drinking at least 2 liters a day. You can also have lime water, coconut water or khas sherbet to quench your thirst and feel fresh during summer.   

2. Mango popsicle

Ingredients:

  • 1 mango
  • 1 cup coconut milk
  • 1 tablespoon jaggery syrup

Method:

Blend all the ingredients together in a blender and pour them in popsicle molds or ice trays (insert a stick) and let it freeze overnight. Thaw it for 5 minutes before serving it to your kids. 

3. Chocolate pudding 

Ingredients:

  • 1 cup almond milk
  • 1 tablespoon cocoa powder
  • ½ tablespoon arrowroot powder
  • 1-2 tablespoon jaggery syrup
  • grated chocolate and almonds for garnish

Method:

In a small saucepan, add the almond milk, cocoa powder, jaggery syrup and arrowroot powder and allow it to boil till it becomes thick in consistency. Pour it in a bowl and allow it to cool at room temperature for 1 hour. Then refrigerate for 2-3 hours. Garnish with grated chocolate and nuts before serving.
