- 1 tablespoon vanilla extract
- 1 cup almonds
- 1 cup hazelnuts
- 1 cup seedless dates
- 3/4 cup sugar
- 1 cup cherry
- 1/4 cup canned apricots
Method:
- Prepare the dry mixture of all the nuts and other dry ingredients
- Make the cake batter using eggs and vanilla extract
- Bake the cake for around 1 hour 45 minutes
- Check regularly and serve fresh
Vegan gingerbread cake
Ingredients:
- 1.5 cups of all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon ground cloves
- ¼ teaspoon of ground cinnamon

- 1 cup non-dairy milk

- 2 cups mixed dried fruit (dates, figs, raisins chopped into small pieces)
- Half cup dates (deseeded and chopped)

Method:
- Add the chopped dates to a frying pan and cook till soft and sticky.
- Place it in a bowl and allow to cool.
- Add the milk and mix well.
- In a mixing bowl, whip the batter till airy. Mix the eggs one by one.
- Add vanilla extract, ground cinnamon, and milk and date mixture.
- Mix the flour with baking soda and baking powder in another bowl. Sift the dry ingredients a little at a time into the wet ingredients and mix well.
- Dust the mixed fruit pieces with the extra flour and add to the batter. Mix with a spatula.
- Pour into the lined cake tin and bake for about an hour. The cake is done when a clean toothpick inserted in the centre comes out clean.

Almond Flour Cranberry Cake
Ingredients:
- 1.5 cups fine almond flour
- 4 eggs
- ¾ cup brown sugar
- ½ teaspoon baking soda
